Living in San Diego doesn’t lend itself to being able to complain about the weather. But this August, San Diego has been HOT. Since we don’t have air conditioning, we are always looking for new ways to cool off. That’s when inspiration struck to turn my favorite tropical green smoothie recipe into a popsicle.
We went to target to buy a set of popsicle molds, and instantly wanted to try if our idea would work.
Why had we not thought about this before?
After trying two flavors, the green smoothie popsicles turned out even better than expected. With the hint of pineapple and mango, they are the perfect afternoon pick-me-up when dealing with the hot August sun. Plus, they feel like the perfect healthy replacement for store-bought iced treats.
Green Smoothie Popsicles
2 large handfuls of baby spinach
1 banana (frozen has best results)
1/2 cupl frozen mango (about 1/2 cup)
1/4 cup frozen pineapple (about 1/4 cup)
2 cups cold water, or to desired consistency
Mix all ingredients in a high speed blender. Pour mixture into popsicle molds and freeze over night. Once frozen, run popsicle molds under water for a few minutes before removing the top, then enjoy!
(you can, of course, make this recipe and just drink it as a smoothie, which I do often. But having a popsicle is such a fun treat, I highly recommend trying it!)
