One of my New Year’s resolutions for 2016 was to try at least one new recipe each week. My goal has been to become a better cook, to get better at choosing ingredients and spices and making meals that I want to share with people. I feel very comfortable cooking for myself, but not always so confident in my ability to make food that other people would also like. Trying a new recipe each week not only helps to broaden and expand my meal repertoire it also helps me to eat more variety.
Another big thing that I try to use in making meals is to focus on color. Trying to have different colors on my plate at each meal is a great way to boost the nutrient profile of meals. Using fruits, vegetables,and spices to color up your meal means you are adding loads of antioxidants and nutrients. It also means you don’t have to spend too much time thinking about whether or not something is healthy. You can get out of your head, and allow yourself to enjoy your food for how it looks and tastes. This means you will take some of the stress out of eating, and can thus better digest and enjoy and feel satisfied from the food you eat.

This week I made a tostada by just putting a tortilla in the oven and then topping it with beans and veggies and salsa and it was so good! I got inspired by this recipe from Whole Foods.
