{Straw}berries and Cream Chia Pudding

As much as we try to plan and prepare for life, the reality is the unexpected is inevitable.

Last week I drove across the country, alone, for the first time. It was a three day trip, and everything went smoothly until my final day when I was driving through Louisiana. I had a tire blow out. I’m really lucky in that it was a tire and not anything more serious. More so, I’m really lucky because someone pulled off to help me instantly. A stranger took a few hours out of his day to not only make sure I was doing okay, but also took off my flat, took me to get a new tire, and then replaced the new tire for me. It was a huge blessing, and an incredible random act of kindness.

Despite the initial fear of having a mishap on the road, the whole situation left me feeling really grateful, supported, and incredibly blessed.

It left me realizing that it’s really our perspective of situations that gives them power.

It also left me reminded that detours are not always a bad thing.

Sometimes, they are a blessing in disguise.


I do hope to pay forward the random act of kindness I received, but for now I’ll settle with sharing one of my favorite recipes right now: {straw}berries and cream chia pudding.

Chia pudding is such a great breakfast option because it can be taken to eat on the go and is filled with protein and healthy fats to keep you and your blood sugar satisfied for hours. Plus, it tastes delicious.

{Straw}berries and Cream Chia Pudding

5 strawberries

1-2 tsp honey

3 Tbs chia seeds

1 cup coconut milk (or milk of choice)

Mash strawberries with fork. Add mashed strawberries, chia seeds, honey, and milk to a jar. I do think coconut milk is going to make this taste more creamy, but follow your own taste buds. Mix everything well. It will kind of look like strawberry milk.  Place in refrigerator for at least 10 minutes, or preferably overnight. Enjoy!
