Fall has always been my favorite season. Something in the air makes everything feel fresher, crisper, and lovelier. The colors on the trees light up the world around, and the mountains seem to glow in the stunning fall light.
Fall starts the transition from warm weather, to cooler weather and shorter days. It’s a time when I start to crave more grounding, cooked foods as opposed to all the raw fruits and salads I love in the summer.
This quinoa bowl has been a favorite of late, as it is full of flavor, color, and nutrients. It’s colors reflect those of the beautiful fall surroundings, and there’s a million ways to make it your own.
Fall Colors Quinoa Bowl
1 cup red quinoa, uncooked
1/2 cup black beans
1 cup kale
1 Tbs coconut oil
mixed veggies of choice
1-2 cloves garlic, depending on how much garlic you like
dallop garlic goat cheese, optional
dallop hummus of choice
dollop of salsa
Cook quinoa according to directions (one cup quinoa in two cups of water, bring to bowl, cover and simmer for 15-20 minutes). Saute garlic in coconut oil. Add kale and veggies of choice.
Put cooked quinoa in bow, add black beans, sauted veggies, hummus, goat cheese, salsa, and salt to taste.
