Chia pudding has been a favorite of mine for a while. It’s the perfect breakfast, snack, or sweet treat that can both satisfy your cravings, while also giving you a serious boost of energy and nutrients. Chia seeds are a wonderful source of healthy fats and protein, while raw cacao is great for antioxidants and magnesium (among a plethoof other benefits).
The beauty of chia pudding is that all you have to do is combine three ingredients, and you’ve got a healthy and satisfying meal ready to go. I love to make it ahead of time as breakfast so in the morning I can just grab my food ready-to-go from the fridge!
Chocolate Chia Pudding
3 Tbs chia seeds
1 cup coconut milk (or milk of choice)
1-3 tsp raw cacao, or to taste depending on how chocolatey you want it
(Optional) vanilla stevia, to taste
Combine all ingredients into a small bowl. Mix well. Let sit in fridge for at least 10 minutes or overnight. Sitting overnight allows a better, more pudding like texture
