Monday Musings: Easy Salad Prep

Happy Monday!

I hope you had a wonderful weekend! Mine was spent pretty quiet, with lots of time enjoying the spring sunshine. I was able to check out Cinderella with a friend yesterday, and had to say goodbye to one of my roommates. Definitely a weekend in balance.

I also was able to go through The Desire Map and do some real clear soul-mapping. It was a wonderful experience, and I will be sharing more about it later this week. All in all a very good, restful, and productive weekend. Now I feel ready to take on the week!

I spent a lot of time doing some meal prep yesterday and came to a very simple, but brilliant, plan on how to add more diverse veggies into my meals. I eat kale a lot. Like, everyday often twice a day. So I often use this to feel pretty good about my meal choices. I do, however, know that I need to add more diversity to my meals. Adding in more colors of veggies is a sure way to get more nutrients your body needs. But, let’s be real. Sometimes the weeks get crazy and I get lazy about things like, chopping up a bunch of different vegetables.

Not really a big deal, but just this small step can hinder me from going away from my {only} kale salads.


While doing a lot of meal prep yesterday, I came to the realization that I could pre-make my own version of those easy bagged salads you get in the grocery store. Instead of just eating kale, I chopped up a bunch of purple cabbage, diced some bell peppers, and mixed in the kale. BOOM a salad ready to pour and eat right in my fridge!


I usually just use olive oil and some type of balsamic vinegar as a dressing and pour it over my salad so I can massage the kale.

Ready to Go Chopped Salad


Chop small head of purple cabbage into small bits

Dice up two bell peppers (whatever kind is your fav)

Add in your favorite greens of choice, shredded

Mix all ingredients (and any other veggies you want to add like carrots or tomatoes or whatever) in a big ziplock bag or a large glass container. Keep dressing out to the side to put on once you’re ready to eat. Then, you have a veggie filled salad at the ready for you all week! Pour onto plate and top with hemp hearts, sesame seeds, avocado, and your favorite dressing!

I know I crave more vegetables as the weather gets warmer. What better day than Monday to start off with more colors and veggies?
