Happy Saint Patrick’s day, loves!
I hope your day is full of smiles, green, mystery….and minty green smoothies!
My favorite green smoothie of late (and one that honestly tastes like a dessert) is this minty green smoothie inspired by Amanda Gyuran:
(Chocolate) Minty Green Smoothie
1 small handful mint leaves (or 1/2 tsp peppermint extract)
1 handful spinach
1/2-1 cup Coconut Milk (or milk of choice)
1 tsp-1TBS raw cacao (or cocoa powder–just double it if using cocoa powder) depending on how chocolate-y you like it
(optional) 1 tsp maple syrup or honey (you could also add stevia to taste if preferred)
(optional) handful of raw cacao nibs or chocolate chips, to top
Blend all ingredients except cacao nibs/chocolate chips in a blender, adjusting to meet your preference of chocolate and mint. Pour into your favorite bowl and top with chocolate, if desired. Enjoy!
*You can always omit the chocolate parts and just have this as a minty green smoothie!
