I started off my weekend with a Barre class, followed by an awesome post-workout Acai Protein power smoothie. I will be sure to share that recipe tomorrow.
For now, I wanted to share my go-to lunch of the moment.
I absolutely love being able to eat salads at lunch and dinner. However, during the winter I need all the warmth I can get. In order to balance the two, I’ve been making this warming kale salad to satisfy my green cravings, while still keeping me warm.
Warming Winter Kale Salad
2 handfuls of your favorite variety of kale
1/2 cup Quinoa, uncooked
1 cup water
1-2 teaspoons Olive Oil
1-2 teaspoons Balsamic Vinegar
dash of garlic powder
dash of salt
Add kale to a bowl or plate, drizzle olive oil and balsamic vinegar on top. Massage olive oil and vinegar into kale, and set aside.
Cook quinoa as directed (typically just adding twice as much water as grains). Bring quinoa and water to a boil, then cover and cook for about 10-15 minutes. Let sit for a few minutes once you take it off the heat.
Add desired amount of quinoa (probably around 1/4 cup, but more if you want) on top of kale. Mix together to help eat up the kale. Sprinkle garlic powder and a dash of salt on top. Adding a bit of Nutritional Yeast is also delicious, if that feels right for you.
